Vijfschaft

“Vijfschaft” can literally be translated to “Five lunchbreak”. It’s called like this, because it consists out of five ingredients. This dish originates back a few hundred years ago and comes from Utrecht. Back then it was mainly eaten by farmers during the frost period.

Ingredients

2 persons
Vijfschaft
– 700 grams potatoes
– 200 grams pre-cooked brown beans
– 200 grams carrots
– 2 onions
– 1 sweet-sour apple
– Few pinches of salt
Topping
– 1 smoked sausage
– 150 grams smoked bacon bits

Preparation

Vijfschaft

  • 1) Start by washing, and then peeling the potatoes, carrots, onions and the apple.
  • 2) Slice all of the above mentioned ingredients in dices of about ½ cm by ½ cm. And place the pieces in a big cooking pot filled with water. Add a few pinches of salt.
  • 3) Bring the water to a boil. Let the ingredients boil for about 10 minutes and stir occasionally. Then set the heat to it’s lowest and add the smoked sausage.
  • 4) Let the sausage warm up for about 5 minutes. Then drain the water out of the ingredients by using a sieve and put the ingredients (except for the sausage) back in the cooking pot.
  • 5) Now add the 200 grams of brown beans and stir these carefully through the ingredients. Let them rest for about 10 minutes, so they’re able to warm up. In the mean while continue with the topping.

Topping

  • 6) Bake the bacon bits on medium-high heat, until they turn brown and crunchy.
  • 7) Cut the smoked sausage in cirkel shaped slices.

Congratulations you’re done!
Serve this dish on a pre-heated plate. Decorate the plate with slices of smoked sausage on the sides. Place a cup in the middle of the plate and add everything except for the bacon bits around it. Remove the cup and place the bacon bits in the middle of the plate. If you want to add extra taste, pour the fat of the bacon on the vijfschaft.
